I have found a good chicken soup that I am adapting.. The original recipe is called Virus Killing Soup found at Eat at Home. My husband and boys have been hunting lately and we have been enjoying their rewards
So, I have adapted the recipe
Start with..
4 pheasants
10 cloves of garlic ( don’t worry, you won’t notice it when it’s done!)
I used Poultry Seasoning
a little cayenne pepper
bell peppers
and water to cover.
Cook on high until meat falls off the bones. I started cooking at 8 am and turned off to cool at 10:30 to cool enough to pull the bones.

When the meat falls off the bones, separate from the bone and return to the pot. I also added chicken broth at this point.
I also added ..
1 whole celery bunch, chopped and stringed
1 half red onion
2 cans drained diced tomatoes
half bag of cut up carrots, about three cups.
1 1/2 cups rice
I returned to the stove and simmered all afternoon!

I might get brave and try this out this week end. I was shocked at ten gloves of Garlic!
How many hours should I simmer?
it was really good! The original recipe called for a whole chicken so I want to try that too
It does take a lot of garlic but to be honest, I didn’t even notice it! It simmered all day.. about 3 hours before I de-boned the birds and then 6 hours after that
It was well worth it! It came out more like stew so I added more chicken broth after dinner and we have a whole pot left for tomorrow or this weekend:)
